- 2 Cup Flour
- 4 Tsp baking powder (heaping)
- Salt
- 15g butter (about)
- 3/4 Cup water or beer (about)
- milk
Fire off a campfire and let it die down. Sift the flour and mix in the salt and baking powder, then rub in the butter as with scones. Mix in the water or beer .. not too much. Knead lightly on a board until smooth. Form into a round shape. Wrap the dough in foil or put in a camp oven and brush with a bit of milk. Cover with the hot coal remnants of the fire. Serve with jam or syrup.

| Bacon & Corn Chowder |

- 3 rashers bacon - chopped
- 2 crushed cloves garlic
- 1 Tsp chopped scallions
- 2 Tsp flour
- 1/4 Cup milk plus extra 2 Cup milk
- 1 Cup water
- 1 chicken stock cube
- 1 large potato - cubed
- 440g can corn - drained
- 1/4 Cup cream
Brown bacon, garlic and scallions in butter until soft. Blend flour with 1/4 Cup milk, stir into pan. Cook until thick and bubbling. Gradually stir in extra milk, water, stock cube, potato and corn. Cook until potato is tender, stirring often.

| Trail Mix |

- 1 pkg Ranch Dressing Mix (dry)
- 1/4 Tsp lemon pepper
- 1/4 Tsp garlic powder
- 3/4 Cup salad oil (corn)
- 1/2 lb. cheese cracker
- 2 Cup small pretzels
- 1 1/2 Cup chex cereal
- 1 Cup peanuts
Combine Ranch Dressing Mix with lemon pepper, garlic powder, and oil. Place on fry pan for 15 minutes, stirring frequently.

| Banana Sticky Buns |

This is probably best prepared in your home oven or RV.
- 1-10 oz. can of refrigerator biscuits
- 4 Tsp melted butter
- 2 sliced bananas
- 1/4 Cup shredded coconut
- 1/2 Cup orange marmalade
Melt the butter and grease a muffin tin with the butter.
Place 3 banana slices in each Cup. Drizzle 1 teaspoon of marmalade over the bananas. Sprinkle 1 teaspoon coconut over that, and top it off with one biscuit. Brush each biscuit with butter before baking. Bake in 325° oven for approximately 20 minutes.

| Campfire French Fries |

- 4 potatoes, cut into strips
- 1 to 2 tablespoons Parmesan Cheese
- 1 tablespoon margarine
- 2 tablespoons bacon bits
- salt & pepper
Place potato strips on a large square of heavy duty foil, dull side out. Sprinkle with salt, pepper and cheese. Shake a bit to coat. Dot with margarine and sprinkle with bacon bits. Seal the foil, leaving a steam vent on top. Grill over hot coals turning several times until potatoes are tender; about 30-40 minutes.

| Campfire Muffins |

- 6 oranges
- 2 packages muffin mix, any flavor
Cut oranges in half and scoop out orange segments it is the hollowed peel shells that you need but have the fruit for use with fruit salad or juice. Prepare the muffin mix according to package directions. Fill the orange peel Cups half full of batter. Wrap each one loosely with heavy duty aluminum foil. Place in hot coals and make certain that the batter side stays up. Cook 5 - 10 minutes until muffins are done.

| Eggs In A Hole |

- Frying Pan
Take a slice of bread and cut out a circle about 2" in diameter. Toast slowly and lightly on both sides on a stick or campfire fork. In a frying pan, melt butter, put the toast in the pan and wait until it sizzles. Break an egg and place it into the hole. Heat slowly and evenly. Sprink salt & pepper over the eggs and then cover. It will be done when the top of the egg turns white. If you have no cover, turn toast over when underside of egg is cooked.
